This famous tapa is served ala plancha or cooked on a hot searing plate with fresh tiger prawns, a lot of garlic, olive oil and chili peppers, finished lastly with a dollop of butter to create a creamy sauce to sop with crusty bread. This particular recipe though has tomatoes and peppers added with a hint of heat from fresh finger chili. Always a winner on the tapas spread.
